Curry in Indian cooking is not the popular yellow spice mixture you buy at the supermarket, rather it is a spicy base sauce for countless ragout-like dishes – indeed curries. Accordingly, you can have vegetable, meat and fish curries.

Masalas (spice mixtures), on the other hand, are essentially the heart of Indian cuisine. There are countless ways to compose Masalas, but it is always the result that counts. Each Masala is kept a culinary secret and defines the quality of the cooking.

Only directly from the mortar will freshly ground coriander, cumin or cardamom release its full flavour – we never touch premade spice mixes.
