The gastronomic concept of the quick service Thali was borrowed from the famous Dhabba Wallas in Mumbai. This is an impressive logistical feat orchestrated by servers who extend the home kitchen to the workplace. The idea is that everyone gets their own, personal meal, whether they want strictly vegetarian, no beef, no pork or something completely different.

In India, food is strongly tied to identity and well-being. It also sets the daily rhythm.
